Easy Banana Bread





Being as how we had a bunch of {very} over-ripe bananas sitting on our counter that were almost past the point of saving, I decided to try my hand at making banana bread. I had never made banana bread before but figured it couldn’t be too hard.

After searching the internet for recipes, I landed upon this one. It looked really easy, and many of the comments mentioned substitutions I was thinking of trying. It mixed it up pretty quickly, and everyone loved it.




Here’s the recipe, with my alterations in {brackets}:

  • 3 bananas, mashed    { 4 }
  • 1 c sugar    { 1/2 c honey + 1/2 c brown sugar }
  • 2 eggs, beaten
  • 1/2 c oil    { 1/2 c coconut oil + 1/2 c applesauce }
  • 2 c flour    {1 c whole wheat flour + 1 c white flour }
  • 1 t baking soda
  • 1/2 t salt    { Himalayan sea salt }

{ Pecans, chopped }  { a few sprinkles of Cinnamon }  { 1 t Vanilla }

note : I just realized I put 1/2 oil plus the applesauce instead of substituting part of the oil. It came out nice and I’ll probably do it the same next time.

First, Preheat your oven to 350°. Mix all your ingredients together, including pecans saving some for topping. { I mixed my bananas and sweetener first, then added the eggs, then everything else} Divide into loaf pans, sprinkle chopped pecans on top and bake. The original recipe says to bake for 55-60 minutes, but I forgot to set the timer. When the bread started looking done on top, I checked it with a toothpick and continued cooking it till the toothpick came out “clean”. In this case it had small little crumbs on it and no trace of gooeyness.
