Chocolate Chip Meets Blueberry

 

When I woke up this morning, I had a hankering for some muffins. Typically, I really like making chocolate chip muffins. But being as how a certain individual in our household has fallen off the deep end of healthy and low sugar and all that kind of stuff, I try to make them a little healthier.

Blueberries are very good for you and have lots of health benefits for your heart and your brain and they go really good with chocolate chips. So this morning I made blueberry muffins and chocolate chips muffins. Together.

They were very yummy.

So here’s the recipe in case you’re interested:

 

Blueberry Chocolate Chip Muffins

  • 1 egg
  • 1/2 c milk
  • 1/2 c oil {coconut oil and olive oil}
  • 1 1/2 c all purpose flour {1/2 whole wheat and 1/2 white}
  • 1/2 c sugar { 1/2 succanat and 1/2 honey}
  • 2 teaspoons baking powder
  • 1/2 t salt
  • 1/2 c blueberries
  • 1/2 c chocolate chips

Heat oven to 400°. Beat eggs then stir in the milk and oil. Add remaining ingredients and stir to combine. The batter should be somewhat lumpy so don’t overmix.

Grease muffin tins or use muffin papers and fill muffin cups 2/3 full. Bake 20 to 30 minutes until muffins are golden brown on top.

 

This is a very versatile recipe that can be adapted to just about any kind of muffin you can imagine. You could use brown sugar, and add some cinnamon and maybe a little nutmeg. You could add some bananas and chopped nuts to make banana nut muffins. Have a little fun experimenting with different tastes!

These also freeze well. I usually make a double batch and freeze the extra. Then in the mornings, I can simply take them out of the freezer, pop them in the little oven for a few minutes and it’s like making fresh muffins every morning! Just be careful and don’t reheat them for too long or they will dry out.
