1lb seasoned breakfast sausageif using unseasoned sausage, use your favorite seasoing to season your own.
8oz cheddar cheesegrated
1/2 cupTrim Healthy Mama Baking Blend or a mix of almond flour and oat fibermay need a little more at the end
2 eggs
Instructions
Brown sausge, breaking up into small pieces
After sausage is cooked, transfer to a mixing bowl leaving some of the fat from the meat.
Add grated cheddar cheese and mix well with the sausage
Add 1/2 cup of baking blend. mix well
Add two eggs and mix well. You may need to use your hands for the final mixture. I find that wetting my hands first makes it easier to mix and form the sausage balls without it sticking to my hands. If you find that your mixture seems to "wet" at this point you can sprinkle a little extra baking blend into the mixture.
Form mixture into bite size balls, try to be consistant in the size you make them so they will all cook evenly.
Bake in a preheated 350 degree oven for 18-20 minutes

Notes
These can be kept in the fridge for a quick breakfast or snack. They can also be frozen if you want to make a larger batch. We just take out the amount we want and heat in the toaster oven.
